Ingredients
- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1/2 cup sun-dried tomatoes (chopped)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown (about 5–7 minutes per side). Remove from the skillet.
- In the same skillet, sauté minced garlic and chopped sun-dried tomatoes until fragrant (about 1 minute). Add fresh spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese and Italian seasoning until the sauce thickens slightly.
- Return the chicken to the skillet, coating it with the sauce; let it cook for a few more minutes to meld the flavors.
- Serve hot, garnished with fresh basil if desired.
