- 1 cup red bell peppers, chopped

Instructions
- Finely chop the red bell peppers and mince the garlic.
- In a medium saucepan over medium heat, combine the chopped bell peppers, sugar, rice vinegar, minced garlic, and soy sauce. Stir well.
- Bring the mixture to a gentle boil and simmer for about five minutes until bell peppers soften.
- To thicken the sauce, mix 1 tablespoon cornstarch with 2 tablespoons water until smooth; add to the saucepan while stirring constantly.
- Cook on low heat until thickened (about three minutes), then remove from heat and let cool before serving.
