- 2 cups grated zucchini (about 1 medium zucchini)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 tsp baking soda
- 2 tsp ground cinnamon
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil (canola or sunflower)
- 2 tsp vanilla extract
- ½ cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In another bowl, beat the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
- Fold the grated zucchini into the wet mixture until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined; avoid overmixing.
- If desired, fold in walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool for about 10 minutes before transferring to a wire rack.
