Instructions
- Gather all ingredients and flake the drained salmon into a mixing bowl.
- In a large bowl, combine flaked salmon, breadcrumbs, egg, Dijon mustard, parsley, salt, and pepper. Mix until well combined.
- Shape the mixture into small patties (2-3 inches wide).
- Heat oil in a non-stick skillet over medium heat until shimmering.
- Fry the patties in batches until golden brown on both sides (about 4-5 minutes per side).
- Drain on paper towels and serve warm with lemon wedges or tartar sauce.
