Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
- In a skillet, heat olive oil over medium heat, sauté minced garlic until fragrant, then add fresh spinach until wilted (about 2 minutes).
- In a bowl, combine sautéed spinach, cream cheese, Parmesan cheese, salt, pepper, and lemon juice; mix until well combined.
- Slice each salmon fillet lengthwise to create pockets and fill generously with the spinach mixture.
- Place the stuffed fillets in the greased baking dish and bake for 20-25 minutes or until the salmon flakes easily with a fork.
- Serve hot with lemon wedges.
