Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook until golden brown (about 7-10 minutes).
- Add garlic and ginger; stir-fry for one minute until fragrant.
- Toss in bell peppers; sauté until tender.
- Mix soy sauce, rice vinegar, and brown sugar in a bowl. Pour over chicken and vegetables.
- Stir in pineapple chunks; simmer everything together for about five minutes.
- Serve hot over rice or noodles.
