  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1/2 cup hummus (store-bought or homemade)
  • 4 whole wheat or spinach tortillas
  • Juice of 1 lemon (about 2 tbsp)
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas thoroughly to remove excess salt.
  2. Dice the cucumber and cherry tomatoes into small pieces. Finely chop the red onion.
  3. In a bowl, mix chickpeas, cucumber, tomatoes, red onion, parsley (or cilantro), lemon juice, salt, and pepper until combined.
  4. Spread a generous layer of hummus on each tortilla.
  5. Place a scoop of the chickpea mixture on top of the hummus-covered tortillas.
  6. Fold in the sides and roll tightly like burritos.
  7. Slice each wrap in half diagonally and serve immediately.
