- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley or cilantro, chopped
- 1/2 cup hummus (store-bought or homemade)
- 4 whole wheat or spinach tortillas
- Juice of 1 lemon (about 2 tbsp)
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas thoroughly to remove excess salt.
- Dice the cucumber and cherry tomatoes into small pieces. Finely chop the red onion.
- In a bowl, mix chickpeas, cucumber, tomatoes, red onion, parsley (or cilantro), lemon juice, salt, and pepper until combined.
- Spread a generous layer of hummus on each tortilla.
- Place a scoop of the chickpea mixture on top of the hummus-covered tortillas.
- Fold in the sides and roll tightly like burritos.
- Slice each wrap in half diagonally and serve immediately.
