- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup chipotle ranch dressing
- 4 large flour tortillas
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded Monterey Jack cheese
- 1 avocado, sliced
- ¼ cup fresh cilantro, chopped
Instructions
- Marinate the chicken in chipotle ranch dressing for at least 30 minutes.
- Preheat the grill or skillet over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until cooked through and juices run clear.
- Let the chicken rest before slicing it into strips.
- Lay out tortillas and layer with chicken, lettuce, tomatoes, cheese, avocado, and cilantro.
- Fold in the sides of each tortilla and roll tightly from the bottom up.
- Cut each burrito in half diagonally and serve with extra chipotle ranch on the side.
