- 2 medium sweet potatoes
- 1 cup canned black beans (rinsed and drained)
- 1 cup shredded cheddar cheese (or dairy-free alternative)
- ½ cup sour cream or Greek yogurt (low-fat if desired)
- 1 ripe avocado (sliced)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash sweet potatoes thoroughly and prick them multiple times with a fork.
- Place sweet potatoes on the baking sheet and bake for 45-50 minutes or until tender.
- While baking, prepare toppings by rinsing black beans, grating cheese, and slicing avocado.
- Once sweet potatoes are done, cut them open lengthwise and fluff the insides with a fork.
- Top each potato with black beans, cheese, sour cream or Greek yogurt, and avocado slices.
