- 1 lb ground turkey
- 2 medium sweet potatoes (about 2 cups diced)
- 2 cups fresh or frozen spinach
- 1 medium yellow onion (diced)
- 2 bell peppers (diced)
- 3 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
Instructions
- Prep your ingredients by dicing sweet potatoes, onion, and bell peppers.
- In a large skillet, heat olive oil over medium heat. Add onion and bell peppers; sauté until softened (about 5 minutes).
- Push veggies to one side and add ground turkey. Cook until browned (7-10 minutes), breaking apart with a spatula.
- Stir in diced sweet potatoes, cumin, and paprika. Cover and cook until sweet potatoes are tender (about 10 minutes).
- Uncover and mix in spinach until wilted (about 2 minutes). Serve hot.
