Instructions

  2. Add minced garlic, thyme, and bay leaf; cook for another minute.
  3. Stir in lentils and vegetable broth; bring to a gentle boil.
  4. Reduce heat to low, cover the pot, and simmer for 25-30 minutes until lentils are tender but not mushy. Season with salt and pepper.
  5. Remove from heat, discard bay leaf, ladle into bowls, garnish if desired, and enjoy.
