  • 16 oz (450g) full-fat cream cheese
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) fresh brewed coffee (strong)
  • 1 cup (240g) sour cream
  • 2 tsp vanilla extract
  • 1.5 cups (150g) graham cracker crumbs
  • 1/2 cup (113g) unsalted butter, melted
  • Cocoa powder (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; mix well. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat softened cream cheese and sugar until smooth. Gradually add brewed coffee and sour cream until well blended.
  4. Stir in vanilla extract and optional cocoa powder for additional flavor.
  5. Pour mixture over the crust and smooth the top.
  6. Bake for 55-60 minutes until slightly jiggly in the center. Let cool before refrigerating for at least 4 hours or overnight.
