Instructions
- In a saucepan, heat whole milk and heavy cream over medium heat until steaming.

- Gradually whisk the warm milk mixture into the egg mixture to temper the eggs.
- Return the mixture to the saucepan over low heat, stirring constantly until it thickens (about 5-7 minutes).
- Pour custard into ramekins or a large dish, cover with plastic wrap, and chill for at least 3 hours.
- For the ganache, heat heavy cream until simmering, pour over dark chocolate chips, let sit for 5 minutes, then stir until smooth.
