- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
- In a bowl, mix eggs and granulated sugar until frothy. Add flour, baking powder, and vanilla; mix until just combined.
- Pour batter into the prepared pan and bake for 12-15 minutes until golden brown.
- While cooling, whip cream cheese, sour cream, sugar, and vanilla until smooth; fold in strawberries.
- Dust a kitchen towel with powdered sugar. Invert the cooled cake onto the towel and remove parchment paper. Roll tightly from one end.
- Unroll gently, spread filling evenly, then roll back up without the towel.
- Wrap tightly in plastic wrap and chill for at least an hour before slicing.
