Instructions
- Preheat your toaster or oven to 400°F (200°C). Toast the whole grain bread until golden brown.
- In a bowl, mash the ripe avocado with a fork. Add lemon juice, salt, and pepper, mixing until creamy yet chunky.
- Heat a non-stick skillet over medium heat and add a splash of olive oil. Crack in the eggs and cook until whites are set but yolks remain runny (about 3-4 minutes).
- Spread the mashed avocado generously onto each slice of toast. Top each slice with a cooked egg.
- Sprinkle red pepper flakes on top for added heat if desired. Serve immediately and enjoy!
