- 1 lb boneless chicken thighs
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 2 tbsp freshly squeezed lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 4 wooden skewers (soaked in water)
Instructions
- Cut chicken thighs into bite-sized pieces.
- In a bowl, mix olive oil, garlic powder, paprika, lemon juice, salt, and pepper.
- Add chicken to the marinade, coating thoroughly. Let marinate for at least 30 minutes.
- Thread marinated chicken onto skewers (4-5 pieces each), adding bell peppers or onions if desired.
- Preheat grill to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally until cooked through (165°F internal temperature).
- Remove from grill and let rest before serving.
