Instructions
- Peel and core the apples, then dice them into half-inch pieces.
- In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt until well mixed.
- In another bowl, beat eggs and milk together; gradually add to dry ingredients while mixing until just combined.
- Gently fold in the diced apples.
- Heat about two inches of vegetable oil in a deep skillet over medium heat until shimmering (about 350°F/175°C).
- Drop spoonfuls of batter into the hot oil without overcrowding; fry for 3-4 minutes per side until golden brown.
- Drain on paper towels and dust with powdered sugar before serving.
