- 4 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 8 oz fettuccine or linguine pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 3 cloves garlic, minced
- 3 tablespoons butter
- Salt and pepper to taste
Instructions
- 1. Season the chicken breasts with Cajun seasoning on both sides.
- 2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until golden and cooked through. Remove from skillet and let rest.
- 3. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- 4. In the same skillet, melt butter over medium heat, then add minced garlic and sauté until fragrant (about 1 minute).
- 5. Stir in heavy cream and bring to a simmer. Add Parmesan cheese, stirring until melted and smooth. Season with salt and pepper.
- 6. Slice the blackened chicken and combine it with the drained pasta in the sauce. Toss until well coated.
