  • 1 cup icing sugar
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy (about 3 minutes). Add eggs one at a time, then mix in vanilla extract.
  2. Gradually sift in the flour and baking powder; mix until just combined to avoid tough cookies. The dough should be soft but slightly sticky.
  3. In another bowl, combine the brown sugar and cinnamon for the filling.
  4. Roll small balls of dough, flatten them in your palm, add half a teaspoon of filling in the center, fold, and pinch edges to seal.
  5. Place on lined baking sheets about two inches apart and bake for 12-15 minutes until edges are golden but centers remain soft. Allow to cool.
  6. Prepare icing by whisking icing sugar with milk until smooth; drizzle over cooled cookies.
