- 2 ½ cups all-purpose flour
- 1 cup light brown sugar
- ½ cup granulated sugar
- ½ cup unsalted butter (softened)
- 2 large eggs (room temperature)
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 cup icing sugar
- 2 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy (about 3 minutes). Add eggs one at a time, then mix in vanilla extract.
- Gradually sift in the flour and baking powder; mix until just combined to avoid tough cookies. The dough should be soft but slightly sticky.
- In another bowl, combine the brown sugar and cinnamon for the filling.
- Roll small balls of dough, flatten them in your palm, add half a teaspoon of filling in the center, fold, and pinch edges to seal.
- Place on lined baking sheets about two inches apart and bake for 12-15 minutes until edges are golden but centers remain soft. Allow to cool.
- Prepare icing by whisking icing sugar with milk until smooth; drizzle over cooled cookies.
