- 3–4 boneless, skinless chicken breasts (1 lb)
- 2 tbsp Cajun seasoning
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup sliced bell peppers (red and green)
- 4 cloves garlic (minced)
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 green onions (chopped for garnish)
Instructions
- Cut chicken breasts into bite-sized pieces and season with Cajun seasoning.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown (5-7 minutes).
- Add sliced bell peppers and minced garlic to the skillet; sauté for about 3 minutes until fragrant.
- Pour in heavy cream and add grated Parmesan cheese; stir until the cheese melts into the sauce.
- Cook pasta according to package instructions until al dente; drain, reserving some pasta water.
- Combine drained pasta with the chicken and sauce in the skillet; toss gently to coat.
- Serve immediately, garnished with chopped green onions.
