- 1 cup all-purpose flour

- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup shredded carrots (about 2 medium carrots)
- 1/2 cup chopped walnuts or pecans (optional)
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
- In another bowl, beat the egg and vanilla until smooth, then mix into the dry ingredients until just combined.
- Fold in shredded carrots and nuts.
- Scoop rounded balls of dough onto parchment-lined baking sheets and bake for 12–15 minutes or until golden brown.
- Cool on the baking sheet for 5 minutes before transferring to wire racks.
