Ingredients
- 4 large bell peppers (red, yellow, or green)
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 cup cooked rice (white or brown)
- 1/2 lb ground meat (optional)
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 cup salsa or tomato sauce
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds.
- In a bowl, combine cooked rice, shredded cheese, ground meat (if using), spices, and salsa until well mixed.
- Stuff each pepper generously with the filling and nestle them upright in a baking dish.
- Pour additional salsa or tomato sauce over the stuffed peppers.
- Cover with aluminum foil and bake for 30 minutes. Remove foil to brown tops for an additional 10 minutes.
- Allow to cool slightly before serving; garnish with fresh herbs if desired.
