Ingredients
- 3 boneless, skinless chicken breasts (about 1.5 lbs), diced
- 4 cloves fresh garlic, minced
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 cup bell peppers (mixed colors), sliced
- 1 cup sweet onions, sliced
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Season diced chicken with salt and pepper. In a large skillet over medium heat, heat olive oil.
- Add onions and garlic; sauté until golden brown (about 5 minutes).
- Increase heat to medium-high; add chicken and bell peppers. Cook until chicken is browned (7-10 minutes).
- Sprinkle cheese over the mixture; cover until melted (2-3 minutes).
- Warm tortillas in another pan for about 30 seconds on each side.
- Spoon the cheesy chicken mixture onto each tortilla and roll tightly.
