- 3 large eggs
- 1/4 cup cheddar cheese, shredded
- 1/4 cup mozzarella cheese, shredded
- 1/2 bell pepper, diced
- 1/4 onion, diced
- 1 tbsp butter or olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the bell pepper and onion into small pieces.
- In a bowl, whisk together the eggs until well blended; adding a splash of milk can enhance fluffiness.
- Heat a nonstick skillet over medium heat and add the butter or oil. Sauté the onions and bell peppers until softened (about 3-4 minutes).
- Pour in the whisked eggs over the sautéed veggies and cook for 1-2 minutes until edges are set.
- Sprinkle cheese on one half of the omelette. Once melted slightly, fold it over with a spatula.
- Serve immediately with desired garnishes.
