- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 bell peppers (red and green), sliced
- 8 slices provolone cheese
- Salt and pepper to taste
- 4 soft hoagie rolls
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened, about 5-7 minutes.
- Season the chicken breasts with salt and pepper. Add to the skillet and cook for 5-7 minutes per side until golden brown and fully cooked (165°F internal temperature). Remove from heat.
- Shred the chicken using two forks while still warm, then return it to the skillet with sautéed veggies. Mix well over low heat for 2-3 minutes.
- Layer provolone cheese on top of the mixture, allowing it to melt completely.
- Fill each hoagie roll with the cheesy chicken mixture and add any desired toppings before serving.
