- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup plain yogurt
- 4 garlic cloves (minced)
- 1 tablespoon fresh ginger (grated)
- 2 tablespoons tikka masala spice blend
- 1 can (14 oz) crushed tomatoes
- 1 cup full-fat coconut milk
- ¼ cup fresh cilantro (chopped)
- Juice of 1 lemon
Instructions
- Marinate the Chicken: In a bowl, mix yogurt, garlic, ginger, and tikka masala spices. Add diced chicken and coat well. Marinate for at least 30 minutes.
- Sear the Chicken: Heat oil in a skillet over medium-high heat. Sear marinated chicken pieces until golden brown on all sides (5-7 minutes). Remove and set aside.
- Create the Sauce: In the same skillet, sauté chopped onion and additional garlic until translucent. Add crushed tomatoes and simmer for about 10 minutes.
- Finish the Sauce: Stir in coconut milk until combined and cook for another 5 minutes.
- Combine: Return seared chicken to the skillet, mixing well with the sauce, and cook together for an additional 5 minutes.
