Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream softened butter and granulated sugar until light and fluffy (3-5 minutes).
- Sift together flour, cocoa powder, baking soda, and salt; gradually mix into the wet ingredients until just combined.
- Beat in eggs one at a time along with vanilla extract until smooth.
- Drop rounded dough balls onto prepared sheets and bake for 10-12 minutes until edges are set but centers remain soft.
- To make ganache, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth.
- Once cookies cool, spread raspberry jam on half and top with ganache-covered cookie halves.
