Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together Parmesan cheese, panko breadcrumbs, parsley, and thyme until well combined.
- In another bowl, whisk eggs with salt and pepper until frothy.
- Dip each piece into the egg mixture, then roll in the Parmesan-herb blend until fully coated.
- Place coated pieces on the baking sheet in a single layer; drizzle with olive oil.
- Bake for 15-20 minutes or until golden brown and crispy. Allow to cool slightly before serving.
