- 1 lb baby potatoes
- 3 tbsp olive oil
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 2 tbsp fresh herbs (rosemary or thyme)
Instructions
- Thoroughly wash the baby potatoes and place them in a large pot covered with salted water. Bring to a boil over medium heat.
- Reduce heat and simmer until fork-tender, about 15-20 minutes. Drain and let cool slightly.
- Gently smash each potato using the bottom of a glass or your hands.
- Drizzle olive oil over the smashed potatoes and sprinkle with salt, pepper, garlic powder, and herbs. Toss to coat evenly.
- Preheat your oven to 450°F (230°C) and arrange the potatoes on a parchment-lined baking sheet in a single layer. Bake for 25-30 minutes until crispy and golden brown.
- Let cool slightly before serving; add more herbs or toppings as desired.
