Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nuts.
- In another bowl, mix eggs, pumpkin puree, vegetable oil, sugar, and vanilla until smooth.
- Gently fold wet ingredients into dry until just combined.
- Pour batter into prepared pan and tap gently to release air bubbles.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
