Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, beat the softened butter and sugar until light and fluffy (3-5 minutes).
- Mix in the vanilla extract, then gradually add the flour and salt, mixing gently until just combined.
- If using, fold in the citrus zest.
- Scoop rounded balls of dough onto the prepared baking sheets, spacing them apart.
- Bake for 12-15 minutes or until edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to wire racks.
