- 3 cups day-old cooked rice
- 3 large eggs
- 2 tbsp vegetable oil
- 2 tbsp low-sodium soy sauce
- 3 green onions, chopped
- 1 cup frozen peas and carrots
- 2 cloves garlic, minced
- 1 tsp sesame oil (optional)
Instructions
- Prep your ingredients by chopping green onions and mincing garlic.
- Heat vegetable oil in a large skillet over medium heat until shimmering.
- Sauté garlic and frozen peas and carrots for about three minutes until tender.
- Push the veggies aside and crack in the eggs, scrambling gently until just set.
- Add the day-old rice to the pan, breaking up clumps as needed. Drizzle with soy sauce and mix well.
- Stir in chopped green onions and sesame oil (if using), heating through for another minute.
