- 1 lb large shrimp, peeled and deveined
- 1 ripe avocado, diced
- 2 ears fresh corn, grilled and kernels removed (about 1 cup)
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1/2 cup plain Greek yogurt
- 1 tsp garlic powder
- 1 tsp chili powder (adjust to taste)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare ingredients by washing and chopping the veggies.
- Marinate shrimp in olive oil, garlic powder, chili powder, salt, and pepper for 15 minutes.
- Preheat grill to medium heat. Grill corn for about 10 minutes until charred; remove from grill and cut off kernels.
- Grill shrimp skewers for 2-3 minutes on each side until pink and opaque.
- In a bowl, combine diced avocado, corn, red onion, cilantro, lime juice, salt, and pepper to create salsa.
- Whisk together Greek yogurt with lime juice, garlic powder, salt, and pepper for the creamy sauce.
- Assemble bowls by layering salsa first, then grilled shrimp on top; drizzle with creamy sauce.
