  • 1 lb large shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 2 ears fresh corn, grilled and kernels removed (about 1 cup)
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/2 cup plain Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp chili powder (adjust to taste)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients by washing and chopping the veggies.
  2. Marinate shrimp in olive oil, garlic powder, chili powder, salt, and pepper for 15 minutes.
  3. Preheat grill to medium heat. Grill corn for about 10 minutes until charred; remove from grill and cut off kernels.
  4. Grill shrimp skewers for 2-3 minutes on each side until pink and opaque.
  5. In a bowl, combine diced avocado, corn, red onion, cilantro, lime juice, salt, and pepper to create salsa.
  6. Whisk together Greek yogurt with lime juice, garlic powder, salt, and pepper for the creamy sauce.
  7. Assemble bowls by layering salsa first, then grilled shrimp on top; drizzle with creamy sauce.
