- 1 lb boneless chicken thighs, chopped
- 1 lb shrimp, peeled and deveined
- 8 oz Andouille sausage, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups long grain rice
- 14 oz canned diced tomatoes
- 4 cups chicken broth
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the chicken, vegetables, and mincing garlic.
- In a large pot over medium heat, add olive oil and sauté onions and garlic until translucent.
- Add chicken thighs and cook until browned on all sides. Then incorporate sausage slices and cook until sizzling.
- Stir in bell peppers and Cajun seasoning; then add canned tomatoes for acidity.
- Pour in the rice followed by chicken broth. Bring to a boil then reduce heat to low.
- Cover tightly and simmer until rice absorbs liquid (about 20 minutes).
- Five minutes before serving, fold in shrimp gently until they turn pink.
