- 4 bone-in lamb chops (about 1 inch thick)
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine minced garlic, chopped rosemary, thyme, olive oil, salt, and pepper to create a marinade.
- Generously coat each lamb chop with the marinade. Cover and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat or your oven to 400°F (200°C).
- Sear the marinated lamb chops on the grill or in a skillet for 4-5 minutes on each side until they reach medium-rare doneness (145°F/63°C).
- Remove from heat and let rest for 5 minutes before serving.
