- 1 cup dried red beans
- 1 cup Andouille sausage (sliced)
- 1 medium onion (chopped)
- 1 green bell pepper (chopped)
- 2 stalks celery (chopped)
- 4 cloves garlic (minced)
- 2 bay leaves
- 1 tsp cayenne pepper (adjust to taste)
- 3 cups long-grain white rice
- 4 cups low-sodium chicken broth or water
Instructions
- Rinse and soak the red beans overnight. Drain before cooking.
- In a large pot, heat olive oil over medium heat. Sauté chopped onions, bell pepper, celery, and garlic until soft, about 5 minutes.
- Add soaked beans and sausage slices. Stir in bay leaves, cayenne pepper, salt, and black pepper.
- Pour in chicken broth or water until the ingredients are submerged. Bring to a boil; reduce heat and simmer for about 1 hour until beans are tender.
- Cook the rice separately according to package instructions.
- Serve the bean mixture generously over fluffy rice, garnished with fresh parsley if desired.
