  • 34 lbs beef chuck roast
  • 1 packet ranch dressing mix (about 1 oz)
  • 1 packet au jus gravy mix (about 1 oz)
  • 5 banana peppers or pepperoncini, whole
  • 1 cup low-sodium beef broth
  • 2 large carrots, chopped into chunks
  • 3 medium potatoes, chopped into chunks

Instructions

  1. Sear the beef chuck roast in a skillet over medium-high heat until browned on all sides (about 4 minutes each side).
  2. Place the seared roast in the crockpot. Sprinkle ranch dressing and au jus gravy mix evenly over the top.
  3. Add chopped carrots and potatoes around the roast. Toss in banana peppers.
  4. Pour beef broth over all ingredients in the crockpot.
  5. Cover and cook on low for 8 hours or high for 4-5 hours until the meat is tender.
