- 3–4 lbs beef chuck roast
- 1 packet ranch dressing mix (about 1 oz)
- 1 packet au jus gravy mix (about 1 oz)
- 5 banana peppers or pepperoncini, whole
- 1 cup low-sodium beef broth
- 2 large carrots, chopped into chunks
- 3 medium potatoes, chopped into chunks
Instructions
- Sear the beef chuck roast in a skillet over medium-high heat until browned on all sides (about 4 minutes each side).
- Place the seared roast in the crockpot. Sprinkle ranch dressing and au jus gravy mix evenly over the top.
- Add chopped carrots and potatoes around the roast. Toss in banana peppers.
- Pour beef broth over all ingredients in the crockpot.
- Cover and cook on low for 8 hours or high for 4-5 hours until the meat is tender.
