- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 oz pasta (fettuccine or your choice)
- 2 tsp Italian seasoning blend
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients by finely chopping the garlic.
- In a skillet, heat olive oil over medium-high heat and sear each chicken breast until golden brown (about 4 minutes per side).
- Transfer the seared chicken to the crockpot and add chicken broth, heavy cream, minced garlic, Italian seasoning, salt, and pepper. Stir to combine.
- Cover the crockpot and cook on low for 6 hours or high for 3 hours.
- About 30 minutes before serving, stir in uncooked pasta. Cover again until pasta is al dente.
- Once cooked, sprinkle with freshly grated Parmesan cheese and mix gently until creamy.
