- 8 oz pasta (spaghetti or penne)
- 2 large red bell peppers, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients by washing and slicing the red bell peppers, and mincing the garlic.
- Cook the pasta in a large pot of salted boiling water until al dente (about 8-10 minutes), then drain.
- In a skillet over medium heat, drizzle olive oil and sauté the sliced peppers for about 5 minutes until softened.
- Add minced garlic to the skillet and cook for an additional minute before pouring in the heavy cream. Let it simmer gently.
- Stir in the grated Parmesan cheese, seasoning with salt and pepper until thickened.
- Toss the cooked pasta into the skillet with the sauce, mixing well to coat.
