Instructions
- In a medium saucepan over medium heat, combine milk and sugar until steaming but not boiling.
- Stir in cooked rice and cinnamon; mix continuously for about 5 minutes.
- Remove from heat and add vanilla extract; let sit for 10 minutes.
- If using eggs, whisk them into the warm mixture slowly to avoid scrambling.
- Serve warm or chill before serving. Top with cinnamon or fresh fruit if desired.
