- 2 medium zucchinis
- 1 cup bell peppers (any color), chopped
- 1 small sweet onion, chopped
- 2 tsp extra virgin olive oil
- 1 cup shredded mozzarella cheese (or a mix of mozzarella and parmesan)
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out some flesh to create space for filling.
- In a skillet over medium heat, warm olive oil. Sauté chopped onions and bell peppers until soft.
- Stir in Italian seasoning, salt, pepper, and shredded cheese until well combined.
- Spoon the mixture generously into each zucchini half. Place them on a parchment-lined baking sheet.
- Bake for 25-30 minutes until zucchinis are tender and cheese is bubbly and golden.
