- 1 lb ground lamb or beef
- 1 medium onion, finely chopped
- 1 cup carrots, diced
- 1 cup frozen peas
- 2 cups mashed potatoes (from about 2 large potatoes)
- 1 cup low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil. Sauté the onion and carrots until soft, about 5 minutes.
- Increase heat and add ground meat; cook until browned.
- Stir in peas, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour in beef broth and simmer for about 10 minutes.
- Boil peeled potatoes in salted water until fork-tender. Drain and mash with butter/cream until smooth.
- Spread meat mixture in a baking dish; top with mashed potatoes. Bake for 25-30 minutes until golden brown.
