- 1 cup fresh corn kernels
- 2 tbsp taco seasoning
- 1 cup shredded cheddar cheese
- ¼ cup chopped cilantro
- Juice of 1 lime
- 8 small tortillas (flour or corn)
- ½ cup sour cream or Greek yogurt
- ¼ cup chopped green onions
Instructions
- Heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in taco seasoning and a splash of water; simmer for about 5 minutes until thickened.
- In a separate bowl, combine corn, lime juice, cilantro, and salt to taste.
- Warm tortillas in a dry skillet until pliable.
- Layer each tortilla with ground beef followed by the corn mixture.
- Top with cheddar cheese, sour cream, and green onions. Serve warm.
