- 2 cups penne pasta
- 2 cups cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Boil salted water in a large pot; cook the penne until al dente (8-10 minutes). Drain.
- In a skillet over medium heat, drizzle olive oil and sauté minced garlic for about 1 minute.
- Add halved cherry tomatoes and crumbled feta to the skillet; simmer for 5 minutes until the tomatoes soften.
- Combine the cooked pasta with the tomato-feta mixture; toss well.
- Transfer to the baking dish, spread evenly, and bake uncovered for 20-25 minutes until bubbly and golden.
- Top with fresh basil before serving.
