- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 1 can (4 oz) diced green chiles
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp chili powder
- ½ cup sour cream or Greek yogurt
- Fresh cilantro (optional), for garnish
Instructions
- Season chicken breasts with salt and pepper and place in the slow cooker.
- Add diced onion, minced garlic, cumin, chili powder, green chiles, and white beans. Stir to combine.
- Pour in enough chicken broth to cover all ingredients.
- Cover the slow cooker and set to low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Shred the chicken in the pot using two forks; mix well to combine.
- Stir in sour cream or Greek yogurt before serving. Garnish with fresh cilantro if desired.
