Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, beat eggs with sugar and vegetable oil until creamy. Stir in vanilla and grated zucchini.
- Gently fold the dry mixture into the wet mixture until just combined; avoid overmixing.
- If desired, fold in chopped nuts for added crunch.
- Pour batter into prepared baking dish and bake for 25-30 minutes or until golden brown. Cool before slicing.
