- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- Juice and zest from 2 fresh lemons
- 2–3 garlic cloves, minced
- 2 cups low-sodium chicken broth
- 1/4 cup low-sodium soy sauce
- Olive oil for sautéing
Instructions
- Rinse the rice under cold water until clear.
- Marinate chicken breasts in lemon juice, garlic, soy sauce, and a pinch of salt for at least 10 minutes.
- Cook rice in chicken broth according to package instructions.
- Sauté marinated chicken in olive oil over medium-high heat until golden brown (about 5 minutes per side).
- Add reserved marinade to the pan with the chicken and let it simmer briefly before mixing in cooked rice.
- Serve garnished with fresh herbs as desired.
