- 1 cup all-purpose flour

- 1/3 cup fresh lemon juice
- Zest of 1 lemon
- 1/3 cup heavy cream
Instructions
- 1. Preheat oven to 350°F (175°C). In a bowl, mix flour and sugar; cut in butter until crumbly. Add egg yolks and combine.
- 2. Shape dough into a ball, wrap in plastic, and chill for 30 minutes.
- 3. Roll out dough on a floured surface to about 1/4 inch thick; cut circles to fit muffin tins.
- 4. Press dough into greased muffin tins; prick bottoms with a fork. Bake for 15 minutes until golden brown.
- 5. For the filling, whisk together egg yolks, sugar, lemon juice, and zest in a saucepan over medium heat until thickened; stir in heavy cream.
- 6. Pour filling into cooled crusts and bake for an additional 10 minutes until set. Dust with powdered sugar before serving.
