Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry.
- Rub olive oil over the chicken; season generously with salt and pepper.
- Stuff the cavity with fresh herbs and lemon halves.
- Place the chicken breast-side up in a roasting pan.
- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 15 minutes before carving and serving.
