- 3/4 cup warm water
- 1 cup ground pork shoulder (or chicken)
- 1 cup chicken stock (homemade or store-bought)
- 1 tbsp fresh ginger (grated)
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 2 green onions (chopped)
- Salt and pepper to taste
Instructions
- Prepare the dough: In a large bowl, mix flour and warm water until a shaggy dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic.
- Make the filling: In another bowl, combine ground pork, chicken stock, ginger, soy sauce, sesame oil, green onions, salt, and pepper. Mix well and refrigerate.
- Roll out the dough: Divide it into 20 equal pieces. Roll each piece into thin circles about three inches in diameter.
- Fill the dumplings: Place a spoonful of filling in the center of each circle. Pinch edges together to seal tightly.
- Steam: Arrange dumplings in a steamer lined with parchment paper and steam over boiling water for 10-12 minutes until cooked through.
- Serve: Transfer dumplings onto a plate and enjoy with soy sauce or vinegar dip.
